Spring has sprung this week, and with the seasonal change comes an abundance of fresh produce and delicious recipe options. Squash, peaches, zucchini, mandarins and more are popping up in produce markets across Sydney, and we’ve pulled together some of our favourite recipes to make the most of these delicious goods. Squash & Zucchini Bake
(50mins. Serves 8)
Ingredients
250g green zucchini
200g yellow squash
⅓ cup breadcrumbs
¼ cup olive oil
½ cup grated parmesan
Method
Preheat oven to 180’C
Trim ends off both zucchini and squash, then cut into 5mm thick slices. Coat lightly in olive oil then place evenly in your baking tray.
Combine together parmesan and breadcrumbs. Sprinkle mixture over veggies in tray.
Cover tray with foil and bake for 30 minutes. Remove foil and bake for a further 5 minutes until golden on top.
