Mandarin & Almond Friands
(30mins. Serves 12)
Ingredients
½ cup flour
1 cup almond meal
1 ½ cup sifted icing sugar
⅔ cup mandarin juice, plus 2 tsp finely chopped mandarin peel and 12 mandarin segments
4 egg whites
185g melted butter
½ cup caster sugar
Method
Preheat oven to 180’C and grease a 12-hole friand pan.
Mix together flour, almond meal and icing sugar, before adding melted butter, 2 tbs mandarin juice and mandarin peel. Stir to combine.
In a separate bowl, whisk egg whites until foaming. Fold into almond meal mixture then spoon batter into friand pan.
Place a mandarin segment atop each friand, then bake for 15 minutes. Stand in pan for 5 minutes before transferring to a wire cooling rack.
Combine caster sugar and remaining mandarin juice in a saucepan over low heat. Cook for 5 minutes or until sugar dissolves. Bring to a boil on increased heat and cook until syrup thickens. Set aside to cool slightly
Arrange friands on a serving platter and serve with a drizzle of syrup.
